Tempeh Vegetarian Stir-fry

This for dinner last night. Took maybe 10 minutes. Leftovers today wrapped in a bok choy leaf. Took maybe 10 seconds.

The Recipe

  1. I sautéed some veggies and herbs that I had just gotten from a farm share and didn’t know what to do with.
  2. I added Tempeh (that I buy at Boise CoOp, has flax seed and brown rice in it) and portabella mushroom.
  3. Sautéed in coconut oil and added a splash of balsamic vinegar.

It was so good! Eating healthy doesn’t have to take time or be complicated!
